This vegetable side dish is a good low-calorie dish to serve with beef or chicken.
Servings: 4 to 6 servings
Ingredients
- 12 ounces fresh green beans, dry tips trimmed off, if required
- 2 tablespoons water
- 1/3 cup fresh parsley, coarsely chopped
- 4 green onions, sliced (green tops only)
- 2 stalks celery, cut into 1/2-inch slices
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Smoked sea salt, sea salt, or salt
- Lime wedges (optional)

In a 1-1/2- or 2-quart microwave-safe casserole combine green beans and water. Cover and microcook on 100 percent power (high) for 5 to 7 minutes or just until tender, stirring once after 3 minutes. Drain in a colander. Rinse with cold water; drain again. Transfer to a serving dish. Toss with parsley, green onion tops, celery, oil, and lime juice. Cover and let stand up to 30 minutes.

Sprinkle with sea salt just before serving. If desired, squeeze lime wedges over each serving. Makes 4 to 6 servings.
