Mayonnaise Chicken: Easy to cook


Ingredients:

  • 4 Chicken breasts, boiled and shredded.
  • 1 Can peaches, drained and diced.
  • 1 Bag potato chips, crushed
  • Mayonnaise



Preparation:


Mix chicken with peaches and mayonnaise and place in baking dish. Top with crushed potato chips and bake for 20 minutes. Serve with rice or lettuce.

My Favourite Fried Chicken

Ingredients:
  • 10-12 pieces chicken
  • 2 tsps. salt
  • 2 tsps. curry
  • 1 tsp. paprika
  • 1/2 tsp. ginger
  • 1/2 tsp. pepper
  • 1 cup flour
  • Enough oil for frying

Preparation:

Mix all ingredients together, except chicken and oil, and put into a plastic bag.

Add chicken one or two pieces at a time and shake until they are coated throughly with the micture. Deep fry at 350º for 15-20 minutes each side.

Baked Chicken A L´Orange: Preheat oven to 350º F

Ingredients:

  • 6 chicken pieces
  • 7 cleaned potatoes, halved salt and peper
  • 2 Tbl. ketchup
  • 1/2 cup soy sauce
  • 1 tsp. minced garlic
  • juice from 2 oranges

Preparation:

Mix the soy sauce with the mustard, garlic, ketchup, salt and pepper. Use this to marinate the chicken for one hour.

Place the chicken and the potatoes in baking dish and bake covered for 1 1/2 hours. Remove cover, pour orange juice over chicken and bake for 1/2 hour uncovered.

Turn pieces every 10 minutes to brown evenly.

Serve with salad

Orange Chicken: Delicious and easy to cook!!!

Ingredients:

  • 1 chicken, cut up
  • 150 gr. ( 5oz.) mustard
  • 4 oranges

Preparation:

Season the chicken pieces with salt and spread with mustard. Place in a shallow pan. Pour obver the chicken the juice and pulp from the oranges. Cook for approximately 1 1/2 hours or until chicken is tender. Baste occassionally with cooking juices.

Oriental Chicken: Preheat oven to 350ºF

Ingredients:

  • 1 chicken, cut up
  • 1 cup soy sauce
  • 1 1/2 Tbl. mustard
  • 1 chicken boullion cubedissolved in 1/2 cup boiling water

Preparation:

Mix the soy sauce with the broth mustard, salt and pepper. Place chicken in baking dish and pour liquid over pieces. Baker for 40 minutes. Chicken is done when juices from leg run clear when leg is pierced.

Serve with rice and mashed potatoes.

Peruvian Recipes,Chicken Lima Style: Peruvian food!!!

Ingredients:

  • 2 Chickens, cut into pieces
  • 1kg. onion, sliced
  • 1/4 cup oil
  • 1/2kg. olives
  • 1 lettuce
  • 4 Tb. mandioc
  • 1 tsp. sugar
  • 1/4 bottle vinegar
  • 4 fresh pepers: minced red pepper, garlic, salt, pepper and oregano hard boiled eggs

Preparation:

Boil the chicken pieces in salted water garlic. Remove pieces and sprinkle with mandioc or cornstarch. Fry in hot oil. Lightly boil the onion.

Meanwhile make a sauce with the oil, ground red pepper and garlic. Add the vinegar, sugar and boiled onion. Simmer until donde, season to taste with salt and pepper.

Place the chicken on a platter, cover with the sauce. Garnish with lettuce leaves, olives, slices of hard boiled egg and fresh pepper.

Chicken with Mushrooms: Delicious!!!

Ingredients:

  • 1/3 cup butter
  • 1/2 tsp. rosemary
  • 2 tsp. salt
  • 1/4 tsp. paprika
  • 1 k. chicken pieces
  • 1/4 cup flour
  • 1/2 cup dry white wine
  • 2 cup sliced mushrooms


Preparation:


Heat oven to 375º F. Put butter in large baking dish and melt in oven. Remove from oven and stir in rosemary, paprika and salt.

Roll chicken pieces in flour and then butter. Bake for 30 minutes. Pour in wine and sprinkle mushrooms over chicke. Cover and bake for 30 minutes. Uncover and bake for 15 minutes.

Chili Baked Chicken: You have to prove!!!

Ingredients:

  • 12 chicken breasts
  • 1 cup sour cream
  • 1/2 cup minced green onion
  • 2 cloves garlic, minced
  • 2 tsp. grated lemon rind
  • 3 tbsp. lemon juice
  • 1 tbsp. Worcestershire sauce
  • 1/2 tbsp. dried thyme
  • 1/2 tbsp. black pepper pinch cayenne pepper
  • 2 1/2 cup fine cracker crumbs
  • 4 tbsp. chili powder
  • 1/3 cup butter

Preparation:


Clean chicken. Stir together cour cream, green onion, garlic, lemon rind and juice, Worcestershire sauce, thyme, black and cayenne pepper. Add chicken, coating wel.

Cover and refrigerate 8 hours or overnight. Combine cracker crumbs and chili powder. Roll chicken in crumbs and drizzle with butter.

Cleaning Hints for Cooking

Here are some tips to cleaning vegetables an fruits:

  • Use iodine for soaking and disinfecting fruits and vegetables. Four to five drops to three or four quarts of water. Rinse afterwards in filtered, boiled water

  • Use two drops of permanganate to a quart of water to disinfects fruits and vegetables. Rinse with filtered boiled water.

Peruvian Recipes ,Papaya Chicken: Delicious and easy to cook

Ingredients:

  • 1/2 tdp.salt
  • 1/4 tsp.cayenne pepper
  • 1 tbs.lemon juice
  • 2 chickenbreasts-cut in this strips
  • 3 tbsp. cornstarch
  • 3 tbsp. chicken broth
  • 1/4 finely chopped onion
  • 2tbsp. oil
  • 1tbsp. peeled, minced ginger root
  • 1 1/2 cup chicken broth
  • 1 medium green pepper cut in 1 1/2 inch pieces
  • 1 papaya cut in 2 x 5/8 inch strips
  • 2 cup hot cooked rice

Preparation


Combine salt, cayenne, pepper and lemon juice. Stir in chicken to coat. Combine cornstarch and 3 tbsp. Chicken broth.

In large span, medium hit, cook onion in oil. add chicken and ginger root-bring to a boil-them simmer 2 minutes.

Add green pepper (cook 2 minutes). Add papaya. Stir in cornstarch mixture. Cook and stir until thickned and papaya heated.

Serve over rice.

Cooking Hints: Some Tips for cooking

  • Always preheat oven to desired temperature. Increase sea level recipes by 25º.
  • Powedered milk may be sifted with dry ingredients for cakes, cookies and water added separately.
  • Be sure your powder is still active. Try 1 teaspoon of it in 1/3 cup hot water. Don´t use it unless it bubbles enthusiastically.
  • At high altitudes flour tends to dry out. Should the dough appear a bit too dry add a small quantity more of liquid.
  • Converting sea level baking recipes to high altitudes:
Baking Powder : Decrease 1/4 to 1/2 per teaspoon
called for.
Liquid : Increase 2 tablespoons per cup called for.
Sugar : Decrease 1/4 to 1/3 per cup called for.
